The main Surya Pongal ritual involves boiling freshly harvested rice with milk and jaggery, and Mattu Pongal honors cattle that toil in the fields, highlighting the festival's historical ties to farming.
Begin at sunrise with Surya puja: boil fresh Pongal (rice with milk and jaggery) in a new pot, offer it to the Sun while chanting mantras such as Om Surya Namaha, and bless cattle (Mattu Pongal) with sugarcane, coconut, and fruits.
Because Pongal follows the sun’s entry and local tithi/nakshatra, Panchang differences can shift the date and muhurat, so celebrations vary by region.
